La Alcarria Ratatouille
- 1 onion
- 1 medium-sized courgette
- 2 aubergines
- 2 green peppers
- 4 ripe tomatoes, blanched and peeled
- 2 cloves garlic
- 1 bouquet garni
- 6 tablespoons high quality olive oil
Dice all the ingredients.
Lightly fry the garlic cloves in oil.
Put the ingredients into the pan, following this order: green peppers, onion, aubergines, courgette and tomatoes.
Lightly fry everything for 20 minutes until it is done to a turn. Season to your taste with salt and pepper.
Serve with fried bread crusts.
